Shai Kessler learned knife sharpening the old-school way: working in professional kitchens where a dependable edge isn’t a luxury, it’s a necessity.
He sharpens using traditional Japanese whetstones, shaping edges by hand instead of grinding them down on machines. A properly sharpened knife isn’t just more satisfying to use—it’s safer, faster, and makes everyday cooking a whole lot easier. And that's the goal with every edge.
RESPECT THE EDGE
DROP OFF. Bring your knives to the Reed Street Bottle Shop (34 Reed Street, Coxsackie) between Wednesday and Friday.
WE SHARPEN. Each knife is hand-sharpened on whetstones. Small repairs addressed on a case-by-case basis.
PICK UP. Knives come back clean, sharp, and ready for the cutting board (you'll get a text when they're ready for pick up).
SHARPENING PRICED AT $2.00 an inch, $12 minimum per knife.
$15 additional fee for minor repairs or exceptionally dull knives.
SERVICE NOTES
Knives are inspected before sharpening, but pre-existing issues such as cracks, weakened steel, deep chips, or prior improper sharpening may become more visible during service. Kessler’s Edge is not responsible for failures resulting from pre-existing conditions.
Sharpening restores an edge by removing a small amount of steel. Minor repairs (such as chip removal or tip repair) may slightly alter the original blade profile. Some knives made from very soft, heavily worn, or low-quality steel may not hold an edge for long. Edge retention ultimately depends on the condition and quality of the blade.
Stone sharpening may leave light cosmetic marks near the edge. These do not affect performance.
In the unlikely event of damage during service, liability is limited to the reasonable replacement value of the knife.
Sharpened knives are extremely sharp. Customers are responsible for safe handling after pickup.
Kessler’s Edge sharpens kitchen knives only and reserves the right to decline knives that are excessively damaged, unsafe to sharpen, or unlikely to benefit from service.
